Green chicken enchiladas

Look. There are few things that I hate more in the world than leftovers. But, even I must resort to leftovers when work gets crazy – and these enchiladas are the thing I love to make for the occasion.

This week, I put together a half-recipe on Sunday, and have eaten a few enchiladas for dinner a la carte or with a quick side salad. Did I mention they reheat hella-well in the microwave? And they're gluten-free if you ensure you're buying pure corn tortillas.

A full recipe feeds about 4 hungry people.

What you need

12-14 corn tortillas

2 large chicken breasts, cooked (Use this recipe to roast your own or buy a rotisserie chicken)

2 cups, salsa verde

4 cups Mexican-style cheese, queso chihuahua or "quesadilla cheese"; reserve 1 cup of cheese to top the enchiladas

Juice of 2 limes

How it works

Preheat oven to 350-degrees F. Grease a 9x9-inch casserole dish and set aside.

In a small mixing bowl, pull apart chicken into large chunks (think about 2-3 inch long pieces).

In a large mixing bowl, measure out salsa verde and add the lime juice. Stir together until combined.

To assemble the enchiladas, take a single corn tortilla and coat on both sides with the salsa verde by dipping it into bowl. Using your hands, place 4-5 pieces of chicken into the sauce-coated tortilla and add about a tablespoon of cheese over the chicken.

Roll the enchilada; you've over-stuffed the enchilada if there isn't about a half-inch overlap between the ends of the tortilla. Place enchilada seam-side down into a greased 9x9 inch casserole dish. 

Repeat until you've used all of the chicken. Enchiladas should be placed neatly side-by-side and will fit snuggly within the dish. Pour remaining salsa verde over the enchiladas. Sprinkle the reserved 1 cup of cheese evenly over the enchiladas.

Place enchiladas into oven and bake for 25 minutes to heat through and melt the cheese.

Serve immediately.

The keep for up to a week covered in the fridge. To reheat, place an enchilada or two on an oven-safe dish and microwave for 1-1 1/2 minutes on high in the microwave.
